This Koikuchi Shoyu from Adachi differs from other koikuchi in that it uses only whole soybeans, wheat, and salt which are all locally grown in Japan. This results in an incredibly flavorful, umami-packed soy sauce.

Whole bean soy sauce can be used just like any other variety of soy sauce, but expect a milder and more complex flavor than standard soy sauces that use defattened soy beans. 

Adachi Jozo is a Japanese soy sauce brewer local to Hyogo prefecture in the Kansai region of Japan. Their goal is to bring authentic and delicious shoyu using only the highest quality of domestic ingredients.

While 97% of Japanese soy sauce is made from imported and oil-processed soybeans, Adachi has incredibly strict standards, and this soy sauce is made only with domestic ingredients, with traditional methods, and completely without additives.
